Cala Falcó is a family owned 42.5-hectare estate on the dramatic coastline of Mallorca.
The estate nurtures a family of brands, one of which is Cala Falcó at Spring. The estate feeds them with inspiration drawn from its wild botanical farm and the family’s deep-rooted connection to the creative arts and the natural world.
With a commitment to reversing the biodiversity loss caused by decades of agricultural intensification, Cala Falcó actively regenerates the soil through sustainable farming practices of botanicals. More than a place, it is a living example of how humans can enrich, rather than deplete, the earth—whilst enriching themselves too.
Cala Falcó at Spring is a celebration of this harmony between nature, science, and artistry. A restorative botanical aperitivo crafted from the wild botanical farm of Mallorca.
We believe the answer lies in reverence, in rhythm, in the quiet understanding that we are not separate from nature but a part of it. To take without giving, to rush without listening, only breaks the delicate balance that has sustained life for centuries. Instead, we choose another way—the Cala Falcó Way.
Here, we move with intention, honouring the soil, the sea, the air we breathe—everything above us, beneath us, and beside us. We craft with care, believing that true luxury is not in abundance but in the rare, the meaningful, the deeply personal. We find a deeper sense of happiness, trusting that time enriches everything it touches— ingredients, experiences, even ourselves.
And we discover a level of health and wellbeing that isn’t temporary, but transformative—for the mind, body, and spirit. We have been conditioned to accept the artificial as normal. But deep down, we long for something real. Something regenerative. A life woven with the elements, not against them.
At Cala Falcó, we listen to nature as a teacher, a guide, a partner. And we bring our teachings into today—modernising ancient values for a new era. This is more than a philosophy. It is an invitation. To return to something pure, joyful, and enduring.
Welcome to our way. The Cala Falcó way.
Montserrat Valle is the visionary behind it all—the founder whose deep intuition, curiosity, and love for the land gave birth to the project. With a unique ability to see potential where others see rawness, she weaves together agriculture, science, art, and social purpose into a living ecosystem. Montserrat’s vision is not just about products, but about creating a culture—where people, plants, and place grow together. She is the soul of the project, constantly pushing boundaries while staying rooted in authenticity and care.
Esteve Gomila, is the alchemist behind each of our botanical beverages. With a rare ability to translate ideas into tangible creations, he takes inspiration from the land, the plants, and their stories to formulate prototypes that awaken the senses. From a single concept, he crafts complex and balanced blends—rooted in scientific precision and guided by a deep respect for nature. Esteve doesn't just develop our drinks; he designs experiences that connect people to the essence of the plants and the place they come from.
Víctor Alarcón leads the lab with precision and passion, ensuring that every process—from distillation to production—meets the highest standards. He translates ideas from the field into real, tangible products, bridging creativity and execution. As a key part of the creative team, Víctor brings structure, consistency, and scientific rigor to every step of the journey.
At Cala Falcó Farm, Clementina stands as the steward of the land, protecting the essence of the estate and guiding its agricultural heartbeat. With deep knowledge of regenerative agriculture, she advises on the selection and cultivation of key species for production.
Estel de Llevant, founded in 1997, supports people with mental health conditions through training, employment, and inclusion programs. We proudly partner with them in a shared commitment to community and social impact—collaborating on essential oil distillation and welcoming their support during harvests in Cala Falcó.
Cala Falcó produces limited batches using hand picked wild botanicals growing during the relevant season. The botanicals go through an artisanal process unique to Cala Falco.
Steam-distilled hydrosols of farm-grown rosemary and mastic—fortified with their own essential-oil fractions, form the botanical backbone, joined by cold-pressed organic Mallorcan lemon juice.
Mineral-rich, deep-sea storm water is filtered and “re-structured,” then blended with Cala Falcó estate honey and a touch of stevia to balance the invigorating herbal profile.
A vibrant pink hue from mastic berries crowns the blend, which is gently pasteurized for stability, capturing the spirit of a springtime walk along Cala Falcó in every restorative sip.
